Throughout last summer we worked on experimental batches of chevre, feta, molded soft cheeses, jack, caprino romano and gouda. We just purchased a soft serve ice cream machine -- yes, goat milk makes delicious ice cream!

OUR CHEESE PROJECT, with the help of a SARE grant, is well underway. It's been a slow process, but we have a 52-gallon pasteurizer from van't Riet and a new building to house our cheesemaking and baking operations.
